The Sweet Roasting Tin

Written by

Rukmini Iyer

Who’s the author?  Food stylist and writer, Rukmini Iyer, has revolutionised kitchens up and down the country with her best-selling series of one-tin recipe books. There are few households without one or more of the books in the series, which consists of The Roasting Tin, The Green Roasting Tin, The Quick Roasting Tin, The Roasting Tin Around the World, and now The Sweet Roasting Tin. Rukmini is also the author of The Green Barbecue, a collection of vegetarian and vegan barbecue recipes. She lives in London with her partner and collie, Pepper. Stay up to date with Rukmini’s latest recipes (and some seriously adorable shots of Pepper) via her Instagram @missminifer.

What’s it about? The mantra for all of Rukmini’s cookbooks is simple: minimum effort, maximum return. In her latest cookbook, The Sweet Roasting Tin, this ethos endures as Rukmini ventures into the wonderful world of baking.  With her signature fidelity to ease and accessibility, Rukmini presents 75 brand-new recipes that can all be made in standard baking tin formats. Covering all of the baking bases, chapters span traybakes, muffins, loaf cakes, brownies, cookies, crumbles, tarts and cobblers, bread and butter puddings, minimal baking, cupcakes, dough, high days and holidays, and gluten-free, vegan and diabetic-friendly recipes. There is an abundance of nostalgic favourites with a twist, like sticky date gingerbread, alongside recipes from Rukmini’s own childhood, including her mother’s pineapple upside-down cake and coconut burfi. And if, like us, one of the things you love most about Rukmini’s recipes is her focus on layers of flavour and texture, you’ll be delighted to find the likes of chilli-spiked savoury muffins, saffron-scented banana bread and crunchy almond-studded brownies.

With flexibility and creativity in mind, Rukmini takes care to include an extensive list of possible variations for each of her recipes. Each chapter begins by outlining the basic formula behind each of the different bakes and offers a customisable base recipe to follow to come up with your own flavour combos. The possibilities are endless.

Recipes we love: Marzipan, Lemon and Cardamom Loaf, Rhubarb and Vanilla Tart, Spiced Focaccia with Roasted Butternut Squash, Orange Choc Chip Bread and Butter Pudding.

Perfect for: Loyal fans of Rukmini already familiar with her uncomplicated, one-tin cooking style. Amateur and experienced bakers on the search for a fresh set of recipes.

The perfect gift for any baker, our limited edition The Sweet Roasting Tin gift set includes a copy of the book and a stylish yet practical baking tin from the iconic enamelware brand, Falcon. From crumbles to sheet cakes, puddings to brownies, bake your way through the book with the perfect tin for the job.
