Who’s the author? Food stylist and writer, Rukmini Iyer, has revolutionised kitchens up and down the country with her best-selling series of one-tin recipe books. There are few households without one or more of the books in the series, which consists of The Roasting TinThe Green Roasting TinThe Quick Roasting TinThe Roasting Tin Around the World, and The Sweet Roasting Tin. Rukmini is also the author of The Green Barbecue, a collection of vegetarian and vegan barbecue recipes. She lives in London with her partner and collie, Pepper. Stay up to date with Rukmini’s latest recipes (and some seriously adorable shots of Pepper) via her Instagram @missminifer.

What’s it about? As fans of her previous cookbooks will know, Rukmini Iyer has been inspired by a range of global cuisines over the years, from Spanish to Vietnamese. Now, with the publication of India Express, she hones in on her own culinary heritage to create a set of 75 recipes inspired by the vibrant flavours of South India and Bengal. With her characteristic emphasis on achieving maximum flavour in return for minimum effort, these speedy and fuss-free recipes are designed with the modern home cook in mind; you’ll find plenty of Rukmini’s trademark traybakes, as well as stir-fries, snacks, weeknight curries, and simple desserts. Creative and unusual ingredient combinations abound, and the book is infused with the classic Bengali and South Indian flavours of curry leaf, Nigella seed, coconut, lime, and cardamom.

Recipes we love: All-in-one Aubergine, Tomato, and Nigella Seed Curry, Bengali Popcorn Shrimp, Mini Naan Pizzas with Lime & Coriander Paneer, Chilli, Coconut & Lime Salmon with Roasted Cherry Tomatoes, and Shahi Tukra (Bread and Butter Pudding).

Perfect for: Anyone who wants to shake up their midweek meal repertoire and introduce some South Indian and Bengali flavours into their cooking. From family cooks to students, there’s something in India Express for everyone.
