Leek, Balsamic and Goat’s Cheese Upside-Down Tarts

Introduction

At the time of writing, these upside-down puff pastry tarts are all the rage on social media – I’ve had a lovely version with fresh apricots and honey made by my schoolfriend Rosie Downes, followed two weeks later by excellent shallot and cream cheese tarts made by my mum, served with a flourish: ‘I saw these on an Instagram video!’ They’re too much fun not to include here as an easy entertaining dish.
