Mum’s All-In-One Spiced Tomato Rice
This is a really lovely rice dish, packed with peppers and tomatoes and aromatic with nigella seeds. If you add cubes of boiled potato along with the rice for double carbs, it’s easily a meal in itself. I like to use spring onions for ease of chopping, but by all means use an ordinary onion if that’s what you have in. This is a great recipe to use up other veg odds and ends that you might have in your fridge – extra peppers, spring onions, cubed courgette or a bag of spinach stirred through at the end would all work well.
|spring onions, thinly sliced
|yellow pepper, roughly chopped
|orange pepper, roughly chopped
|cherry tomatoes on the vine, halved
|lemon, juice only
|neutral or olive oil
|sea salt flakes
