Makes 1 glass

Introduction from Matthias Giroud

The early morning hues… the sun will soon rise and you are still in the middle of a festive night… It will be your perfect ally with its sweet and sour notes.

Ingredients

For the grenadine syrup
200ml (7fl oz) fresh pomegranate juice
200g (7oz) caster (superfine) sugar
For the Chacha Sunrise
4–6 large ice cubes
90ml (3fl oz) clementine juice
30ml (1fl oz) alcohol-free agave distillate (Fluère brand)
10ml (⅔ tbsp) homemade grenadine syrup

Method

1

To make the grenadine syrup

Put the ingredients into a saucepan, bring to the boil and simmer until you have obtained a syrup. Will keep at room temperature for 2 weeks maximum.

2

To make the Chacha Sunrise

Pour all the ingredients into a serving glass. Stir and garnish.

To garnish: clementine leather

Fruit ‘leather’ is my secret weapon. It is a kind of dried fruit (or herb) paste.

You must first make a vegetable matter purée, in this case clementine matter purée, which you then spread thinly on a sheet and put in the oven. It needs to be very thin. You then use the dehydration setting on the oven (or a dehydrator) for 6–8 hours at 45–50°C (110–120°F).

When you undertake this preparation, allow a sufficient quantity to make a small stock of it. Leathers don’t keep very long (10–12 days), but you can use them to complete a dessert or brighten dry biscuits.
