Introduction from Matthias Giroud

‘Afternoon snack’ always makes one think of tea time, so a stop in London is mandatory. Let’s go for a very British cocktail with notes of bitter orange and, naturally, my dear, Earl Grey tea.

Ingredients

Earl Grey tea soda
5g (1¼ tsp) Earl Grey tea
500ml (17 Fl oz) Mineral water
For the mocktail
4–6 large ice cubes
60ml (2fl oz) apple juice
10ml (⅔ tbsp) lemon juice
1 tsp bitter orange marmalade
100ml (3½fl oz) homemade Earl Grey tea soda

Method

1

For the Earl Grey tea soda

Put the tea in a carafe with the water and leave to infuse in the fridge for 24 hours.

2

Strain, transfer to a soda syphon and gasify. Will keep in the fridge for 1 week maximum.

3

For the mocktail

Put the ice cubes into a glass, then add all the ingredients except the soda.

4

Stir gently, pour in the soda and garnish.

To garnish

1 thin slice of fresh apricot

2 slivers of dried apricot
