Introduction from Katie Marshall

With a fine-tuned balance of sweetness, citrus and fiery heat, this cocktail is a great offering for the festive celebrations. The ingredients given here make a single glassful so the drink won’t lose its fizz, but the recipe can easily be scaled up and put into a big punch bowl if you’re catering en masse. For a drier version, or if you can’t get ginger beer, use ginger ale.

Ingredients

2 tbsp lime juice
100ml (scant ½ cup) cranberry juice
100ml (scant ½ cup) ginger beer (ensure gluten-free if needed)
mint sprig, to garnish

Method

1

Chuck some ice cubes into a highball glass, then add the lime juice and the juiced segments.

2

Top up with the cranberry juice and ginger beer, then give it a good stir to serve and garnish with a sprig of mint.
