Air Fryer Yorkshire Pudding Wraps with Roast Beef

Using an air fryer to make Yorkshire pudding delivers perfectly risen Yorkies that are much healthier too. Pile them up with the best bits from your roast to make a delicious wrap.

From the book

Introduction

Making Yorkshire puddings in the air fryer produces unbelievably good results – just make sure you don’t open the drawer for at least 20 minutes to keep that rise. Used as wraps, you can fill them with whatever leftovers you have from the Sunday roast, but I love beef the best. They’re just amazing.

Ingredients

For the Yorkshire pudding wrap:
1 egg
70ml semi-skimmed milk
30g plain flour
15 sprays vegetable spray oil
salt and freshly ground black pepper
To serve:
1 tbsp horseradish sauce
2 slices of roast beef
4 roast potatoes
your favourite gravy

Essential kit

You will need: an air fryer and a foil tray or cake tin that will fit into your air fryer.

Method

Place the egg, milk and flour in a bowl and whisk together until smooth. Season with a pinch each of salt and pepper.

Set aside the batter to rest for at least 30 minutes or in the fridge overnight.

Preheat the air fryer to 180°C.

Use a foil tray or cake tin that will fit into your air fryer.

Add the vegetable oil to the tray and place in the air fryer for 5 minutes to heat up.

Pour the batter into the tray. It should sizzle. Cook in the air fryer at 180°C for 20 minutes. Do not open the air fryer during this cooking time.

Take the Yorkshire pudding out of the air fryer. Turn it over and flatten it down. Spread the horseradish sauce over the flattened Yorkshire pudding, then fill with the sliced roast beef, roasties and gravy.

Roll up and wrap the ends in foil. Serve with a jug of extra gravy to pour over.
