Ingredients

For the chicken
1kg (2Ib 4oz) chicken wings (with or without skin)
salt
For the marinade
1 tsp coarsely ground black pepper
1 tsp dried oregano
1 tsp chopped thyme leaves
1 tbsp minced garlic
1 tsp paprika
1 tbsp lemon zest, plus 2 tbsp juice
2 tbsp olive oil
Serving suggestion
herby couscous, tzatziki

Method

Prep: 20 minutes. Marinate: 1-2 hours. Cook: 30 minutes.

Split the wings into flats and drumettes (see page 13 of The Ultimate Air Fryer Chicken Book). If you’re using skin-on chicken wings, make cuts in them to help the marinade penetrate the meat.

In a large bowl, whisk together all the ingredients for the marinade and season with salt. Add the wing pieces to the bowl, turning to coat them thoroughly. Cover the bowl, then transfer the chicken to the fridge to marinate for 1-2 hours.

Place the marinated wings in your air-fryer basket or tray. Air-fry at 190°C (375°F) for 20 minutes, then flip the wings over and air-fry for a further 6-7 minutes, until they are cooked through and crispy.

Serve with some herby couscous and tzatziki.
