Roasted Peaches and Ice-cream

Ingredients

4 ripe peaches, washed, halved and stoned
4 tsp dark brown sugar
4 tbsp toasted flaked almonds
good-quality vanilla ice-cream

Method

Heat the oven to 200°C (fan), 220°C, gas mark 7. Pop the halved peaches on a
roasting tray. Sprinkle over the sugar and almonds. Heat through for 15 minutes.

Serve hot, with a dollop of ice-cream on top.

Babies: I like to roast a peach plain for the very small ones and mush into some Greek yogurt.
