Roasted Peaches and Ice-cream
Make the most of seasonal soft summer fruit with this super simple recipe. Caramelised roast peaches pair beautifully with creamy ice-cream and flaked almonds.
A mega-quick pudding that rocks…
|4||ripe peaches, washed, halved and stoned|
|4 tsp||dark brown sugar|
|4 tbsp||toasted flaked almonds|
|good-quality vanilla ice-cream|
Heat the oven to 200°C (fan), 220°C, gas mark 7. Pop the halved peaches on a
roasting tray. Sprinkle over the sugar and almonds. Heat through for 15 minutes.
Serve hot, with a dollop of ice-cream on top.
Babies: I like to roast a peach plain for the very small ones and mush into some Greek yogurt.
