Baked Polenta with Prawns (Shrimp and Grits)

A twist on the classic American shrimp and grits, this one tin dish uses polenta as a base for chilli prawns and roasted cherry tomatoes.

I could not stop ordering shrimp and grits on my last visit to the USA – it’s the most wonderful savoury polenta-like dish, packed with cheese, and topped with spicy, garlicky prawns. Polenta is easier to buy than the slightly coarser cornmeal used for grits, so I have substituted it here for ease.

Ingredients

150g quick-cook polenta
75g mature cheddar
400ml chicken stock
1 small leek, thinly sliced
20g fresh flat-leaf parsley, finely chopped
150g raw king prawns
½ tsp chipotle chilli flakes
1 tbsp olive oil
½ tsp sea salt flakes
200g vine cherry tomatoes, halved
½ lemon, juice only

Method

Preheat the oven to 200°C fan/220°C/gas 7.

Tip the polenta, Cheddar, chicken stock, leek and half the parsley into a small roasting tin and stir. Transfer to the oven and cook for 20 minutes.

Meanwhile, mix together the prawns, chilli flakes, olive oil, sea salt and halved cherry tomatoes and set aside.

Take the polenta out of the oven after 20 minutes and top with the prawns and tomatoes in an even layer. Return the tin to the oven for 10 minutes, until the prawns are pink and cooked through. Squeeze over the lemon juice, adjust the salt to taste, scatter over the remaining parsley and serve hot.
