Vanilla and Bay Loaf
This is a lovely, subtle loaf, with the bay adding a herbaceous note alongside the classic vanilla. If you have time, you can steep the bay for longer than the time it takes to make the cake batter – it’ll give you a more pronounced flavour. One to make when you’re in the mood for a proper slice of cake.
|softened unsalted butter
|caster sugar (golden if preferred)
|vanilla extract (or seeds scraped from ½ vanilla pod)
|medium free-range eggs
