Smashed Sausage Breakfast Tacos

These speedy breakfast tacos with sausage, eggs, avocado, and tomato and are ready in 15 minutes. This recipe serves one, making it a great savoury breakfast option for busy mornings, and it can be easily scaled up for a sharing brunch.

Ingredients

2 sausages of choice
2 soft corn tortillas
1tbsp neutral oil
1-2 eggs
¼ ripe avocado, peeled, stoned and sliced
4–5 cherry tomatoes, cut into quarters
Squeeze of lime juice
Optional toppings
quick Pickled Red Onions (see page 115 of Find Your Healthy)
jarred pickled jalapeños
chopped fresh coriander
hot sauce

Method

COOK THE SAUSAGE MEAT

Remove the sausages from their casings, then spread the sausage meat thinly and evenly over each tortilla, pressing it down.

Heat ½ tablespoon of the oil in a frying pan over a medium heat and place the tortillas in, sausage meat-side down.

Cook for 3–5 minutes until the sausage meat is golden and crisp. Flip and cook the other side for 1–2 minutes, then transfer to a plate.

FRY THE EGG(S)

Add the remaining oil to the pan and crack in your egg(s). Fry for a few minutes until the bottom(s) is crisp. Cover with a lid or plate for a minute or so until the white(s) is set but the yolk(s) is still runny.

ASSEMBLE

Top each taco with the avocado, fried egg(s), cherry tomatoes and a squeeze of lime juice. Add any extras you fancy – pickled red onions, jalapeños, fresh coriander, hot sauce. Serve.

WANT TO…

MAKE IT VEGAN? Swap in your favourite ‘meaty’ plant-based sausages and replace the eggs with tofu scramble (page 89 of Find Your Healthy).

MAKE IT GLUTEN-FREE? Use gluten-free sausages and check your tortillas don’t contain wheat.

BOOST THE FIBRE? Add some cooked black beans or refried beans to the tacos.

    Hi – why do you refer to other recipes in this recipe which are not detailed here? E.g. the “quick Pickled Red Onions (see page 115 of Find Your Healthy)” and “tofu scramble (page 89).” And where did the eggs appear from. 😀
