Roasted Spiced Mushrooms and Paneer with Squash, Pomegranate and Mango
Introduction
Texturally paneer and mushrooms work beautifully when simply roasted together with spices and squash. Along with the mango and pomegranate salsa, this is a flavoursome combination inspired by a New Zealand fusion dish I read about on holiday.
Ingredients
paneer, cut into 2cm cubes | |
butternut squash, cut into 2cm cubes | |
chesnut mushrooms | |
chickpeas, drained | |
olive oil | |
yoghurt | |
ginger, peeled and grated | |
ground coriander | |
ground cumin | |
ground turmeric | |
chilli flakes | |
sea salt flakes | |
For the salsa: | |
pomegranate seeds | |
mango, peeled and cut into small chunks | |
brown sugar | |
fresh coriander or mint | |
freshly ground black pepper | |
lime, zest and juice | |
naan bread and natural yogurt |
