A variation on two of my favourite desserts, pineapple upside-down cake and coconut macaroons. These lovely tropical cupcakes are dusted with just the barest hint of cinnamon – these are probably the most addictive cupcakes.

Ingredients

115g softened unsalted butter
115g caster sugar
2 medium free-range eggs
90g unsweetened desiccated coconut
30g gluten-free plain flour (or ordinary plain flour, if not making gluten-free)
1 tsp baking powder
150g pineapple chunks, drained
A tiny pinch of ground cinnamon, to dust

Essential kit

You will need: a 12 paper cases and a cupcake tin and a wire rack.

Method

Preheat the oven to 160°C fan/180°C/gas 4. Beat the butter and caster sugar together until light and fluffy, then whisk in the eggs, one at a time.

Mix in the desiccated coconut, flour and baking powder, then divide the mixture equally between paper cases in a 12-hole cupcake tin – this will be about 2 heaped teaspoons per case.

Arrange a few chunks of pineapple on top of each cake (eat any remaining pineapple) and dust the tops with a tiny pinch of cinnamon.

Transfer the cakes to the oven and bake for 15–20 minutes, until firm, golden brown, well risen and a skewer inserted into the middle comes out clean.

Cool on a wire rack and serve warm or at room temperature. You can keep these in the fridge in an airtight container for 2 days.
