Paneer
Introduction
This is such an easy two-ingredient recipe, and perfect to make paneer kofta. If you’re just making the paneer to have at home, you could mix it through with sea salt and chopped soft herbs like coriander, chives or parsley, or let it set and then cut it into 2cm cubes to fry or roast. I also like to use it as a stuffing – just crumble it and mix with chilli, ground cumin, salt and lemon juice, stuff the mixture into halved mini peppers and roast, drizzled with a little oil.
