Introduction
This is a lovely balanced dinner and next-day lunchbox that takes very little effort to put together. Brown rice, black beans, lime, tomatoes and avocado were made to go together – think of it as a sort of deconstructed guacamole/salsa dish. Serve with tortilla chips and (vegan) sour cream on the side, if you like.
