Rosemary, Chilli and Brown Sugar Roasted Nuts

Introduction

These are inspired by Nigella’s excellent Union Square Café bar nuts (which were, in turn, inspired by bar snacks she ate in New York) from Nigella Bites. I make random variations of them so often that I’ve stopped looking up a recipe, but I wrote this down so you can recreate them. They’re incredible to serve with drinks (even nicer warm) when friends come round, or indeed just to keep in a jar on the counter for walk-through snacking.
