free-range chicken thighs and drumsticks
lemon, cut into eighths
artichokes in oil, drained (keep the oil)
sea salt flakes
freshly ground black pepper
fresh rosemary

pitted black olives, drained
lemon, zest and juice
flat-leaf parsley, finely chopped
