Griddled Aubergine with Cucumber, Walnuts and Cumin

I love this dish, with the hot, blackened aubergine against the crisp, cold cucumber and the warming walnut and cumin – a refreshing combination, and perfect for a hot day. Aubergine cooked on the barbecue tastes like nothing else, but I’ve given options for making this dish indoors as well, so you can have it year-round.
Ingredients

You will need: a barbecue.
Method
Rub the aubergine slices with the half the salt and roughly ground cumin seeds. Once your barbecue is good and hot, brush the aubergine on both sides with the olive oil, and place on the barbecue grill. Cook for 4–5 minutes until well charred, then flip and repeat on the other side until cooked through.
Meanwhile, mix the cucumber, remaining sea salt and roughly ground cumin, oil, walnuts and lemon juice together, and leave to marinate.
Once your aubergine is cooked, arrange on a platter, and scatter over the cucumber and walnut mix. Serve hot, or at room temperature.
Cook indoors: Cook the aubergine as above but in batches in a ridged griddle pan, or roast in a single layer on a large baking sheet for about 25 minutes at 200°C fan/220°C/gas 7, until well browned and cooked through.
