Ingredients

quinoa, rinsed well (red and white is nice for the colour)
boiling water
sea salt
lime, zest only
tuna steaks
sesame oil
sesame seeds (black if available)
mango, thinly sliced
For the dressing:
spring onions, very finely sliced
red chilli, finely chopped
fish sauce
soy sauce
sesame oil
lime, juice only
fresh coriander, finely chopped
