Ingredients

200g self raising flour
50g brown sugar
1tsp baking powder
1/2 tsp cinnamon
1/4 tsp allspice
pinch of salt
150g dried sweet cranberries
1 egg
225ml buttermilk (see alternative below)
Butter/oil to frying, maple syrup, butter or honey to serve

Method

Simply add all the dry ingredients, mix and then whisk up egg and butter milk, then add to dry ingredients and fold and mix again.

Add little butter and a dash of oil, wait a few minutes until the pan is hot, then make 4 little pancakes. Leave them to fry for about three minutes on each side. Don’t be tempted to prod and flip them – leave them to it.

Serve straight away with above suggestion or – serve with crispy rashers.

* if you dont have buttermilk, dont worry – Instead add 1 tablespoon of Lemon Juice or white wine vinegar to 225ml or 1 cup of Full fat milk, wait 5 mins, the acid will sour the milk, which is exactly what you want.  Then whisk it up with the egg.
