Introduction

This Chia Seed Pudding is a great quick and filling brekkie that you can make the night before and bring with you to eat on the train or bus. High in fibre and nutrition and low in calories and fat, this is good for kids too as it’s high in brain-boosting omega 3’s.

Ingredients

2 tbsp chia seed
250ml rice milk
1/2 banana, mashed
1 punnet of raspberries
2 tbsp oat flakes / porridge oats (gluten-free if required)

Method

Mash up the banana and the raspberries until well mashed. Add all ingredients to a jar or a large glass and leave set for a couple of hours or overnight.

Serve with fresh berries, bee pollen, cacao nibs, goji berries, fresh fruit or whatever you are into! ENJOY.
