Bored of Lunch’s Sticky Sesame Chicken

With tender chunks of air-fried chicken in a sweet, sticky, nutty sauce, this super quick recipe from Bored of Lunch is a brilliant healthy alternative to a takeaway.

Ingredients

3–4 tbsp cornflour
1 tsp garlic granules
1 tsp onion granules
1 tsp Chinese 5 spice
300g chicken breasts, cut into bite-size chunks
1 egg, beaten
low-calorie oil spray
For the sauce:
1 tsp sesame oil
2 tbsp soy sauce
3 tbsp honey
2 tbsp sweet chilli sauce
1 tsp rice wine vinegar
½ tsp Chinese 5 spice
2 tbsp sriracha
1 tbsp garlic purée
1 tbsp ginger purée
To garnish:
1 tbsp white sesame seeds
2 spring onions, chopped
2 red chillies, finely diced

Essential kit

You will need: an air fryer.

Method

Combine the cornflour and spices in a bowl. Coat the chicken in the beaten egg, then in the spiced cornflour mix. Spray well with the oil spray and air-fry for 14 minutes at 200°C.

Mix together the sauce ingredients in a bowl.

When the chicken is cooked, pour the sauce over the chicken and air-fry for a further 2-3 minutes until the sauce thickens, or add the sauce to a small pan to warm over a low heat.

Once cooked, serve garnished with the sesame seeds, chopped spring onions and red chillies.
