Blackberry Cheesecake Grilled Cheese Sandwich
This is essentially a cheesecake in toasted sandwich form. What are you waiting for?
|2 tbsp||cream cheese|
|½||lemon, finely grated zest|
|drop||of vanilla extract|
|pinch||of ground cinnamon|
|1 tsp||honey, plus extra (optional) for serving|
|½ tbsp||roughly chopped toasted hazelnuts|
Butter both slices of brioche and turn them over. In a bowl, combine the cream cheese, lemon zest, vanilla, cinnamon and honey, then spread the mixture over one slice of brioche.
Scatter over the blackberries and hazelnuts and place the other slice of brioche on top, butter side up.
Heat a frying pan over a low heat, add the sandwich and cook for 3–4 minutes each side until golden and crisp. Serve with extra honey drizzled on top, if you like.
