Air Fryer Tuna Crunch Wrap

With tuna and cheese in a tortilla wrap, this quick and easy air fryer recipe is a delicious alternative to a classic sandwich.

I love making tuna crunch wraps as an alternative to a standard sandwich. The peppers and onions really jazz up the tuna along with the delicious melted cheese, and the addition of the tortilla chips gives that unexpected crunch.

Ingredients

1 x 100g can tuna, drained
60g sweetcorn kernels
1/2 red pepper, finely diced
1/2 small red onion, finely diced
4 tbsp ‘light’ mayonnaise
2 large tortilla wraps
2 mini tortilla wraps (or cut two smaller circles from one large wrap)
20g spicy tortilla chips (or your favourite flavour), roughly crushed
60g mozzarella cheese, grated
non-stick spray oil
salt and freshly ground black pepper

Essential kit

You will need: an air fryer.

Method

Mix together the tuna, sweetcorn, red pepper, red onion and mayo in a bowl. Season with a pinch each of salt and pepper, or to taste.

Spoon the tuna mixture into the centre of the large tortilla wraps. Cover the filling with the tortilla chips and scatter over the grated mozzarella.

Place the smaller wraps or cut-out circles on the top of the filling.

Fold the edges of the large wraps over to enclose the filling.

Place the wraps, seam side facing down, in the air fryer, spray them with a little oil and then brush it all over each wrap. Cook at 180°C for 8 minutes or until golden, turning the wraps halfway during the cooking time and adding a

little more oil, if necessary.

Slice in half and allow to cool for a moment before tucking in.
