Watermelon and Feta Salad with Mint and Shallot Dressing
This easy summer salad is a winning flavour combination of refreshing watermelon, salty feta cheese and fresh mint, tossed in a simple homemade dressing of honey and shallots. Taking just a few minutes to prepare, it’s the perfect side dish for barbecues and picnics.
Introduction
I love the sweet, salty and sour sun-kissed kick this salad delivers. You’ll want all the flavours to stay fresh and distinct, so only bring them together at the last minute. The only prep I do at home is to make the dressing and chill the watermelon, which I take with me whole, to keep it cool and juicy.
Ingredients
| 1 small | watermelon, well chilled |
| 200g (7¾oz) | feta cheese (vegetarian, if you prefer) |
| small handful | mint leaves |
| For the shallot dressing | |
|---|---|
| 1 | banana shallot, thinly sliced |
| 1 tbsp | red wine vinegar |
| 2 tbsp | olive oil |
| 1 tbsp | honey |
| sea salt and freshly ground black pepper |
Method
To make the dressing, mix the shallot, vinegar, olive oil and honey in a jar or sealed container. Season with salt and pepper and seal well.
Once at the picnic, cut the watermelon open. Scoop the flesh of the watermelon onto a serving platter. Add the feta, broken into large chunks, and spoon over the shallot dressing. Scatter with mint leaves before serving.
