Prawn Baguettes with Pickled Cucumber and Sriracha
These easy prawn baguettes make a delicious addition to any picnic spread. Layer up the prawn filling with shredded lettuce, quick pickled vegetables and finish with a sprinkling of toasted sesame seeds and a drizzle of sriracha.
Introduction
A fresh light sandwich that packs a punch! The prawns can be replaced with finely sliced steak, white crabmeat, or silky braised aubergine.
Ingredients
| 2 tbsp | rice vinegar |
| 1 tsp | caster (superfine) sugar |
| ½ | cucumber, shaved into ribbons with a peeler |
| 10 | radishes, thinly sliced |
| 1 heaped tsp | pickled ginger, shredded, plus extra to serve (optional) |
| 4 small | baguettes |
| mayonnaise, for spreading | |
| 1 | baby gem lettuce, leaves shredded |
| 150g (5½oz) | small, cooked, peeled Atlantic (cold water) prawns (shrimp) |

Method
Takes 15 minutes, plus pickling time.
Combine the rice vinegar and sugar in a large bowl. Toss in the cucumber ribbons, sliced radishes and ginger (if using) and set aside for at least 15 minutes before assembling your sandwiches (this quick pickle will keep well in the fridge for 1 day).
Assemble the sandwiches just before you head out to your picnic. Cut the baguettes open and spread with a little mayonnaise. Fill with shredded lettuce, the vegetables you pickled, then the prawns (shrimp). Wrap tightly in baking paper or foil, using string or rubber bands to secure, if needed. Also remember to pack a tub of store-bought crispy onions, some toasted sesame seeds, extra pickled ginger (if using) and a bottle of sriracha sauce for people to add before tucking in.
