baby aubergines, cut into thirds (or ordinary aubergines, halved and very finely sliced)
cherry tomatoes on the vine
red onion, roughly chopped
olive oil
sea salt flakes
fresh thyme
fresh rosemary
fresh sage leaves
whole ricotta
extra virgin olive oil
lemon, zest and juice
good sliced focaccia or olive bread, to serve
