This is unashamedly calorie-loaded. I’ve given the quantities below for just one sandwich: multiply as needed. Also works well for breakfast.

Ingredients

2 thick slices of good white bread
1 tbsp peanut butter
1 banana, sliced into coins
20g dark vegan chocolate, roughly chopped
A pinch of sea salt flakes

Essential kit

You will need: a barbecue.

Method

Spread one side of the bread with the peanut butter, then top with the banana coins, dark chocolate and a scattering of sea salt flakes. Sandwich with the other piece of bread, and press down.

Once your barbecue is medium hot, grill your sandwich for 2–4 minutes on each side, pressing it down with a spatula, until the bread is toasted to your liking, and serve hot.

Note: If you are vegan or making this for vegans, do make sure to use vegan dark chocolate.
