Thai-Style Chicken Soup
Tasty Thai style chicken soup from Annabel Karmel. This super simple recipe can be rustled up in just ten minutes - and goes towards your five a day too.
Introduction
Thai-style food tends to be very popular with children. This easy-to- prepare soup is ready in about 10 minutes and is almost a meal in itself. Suitable for freezing.
Ingredients
1 tbsp | light olive oil |
150g (5oz) | chopped onion |
1 | garlic clove, crushed |
½ | red chilli, finely chopped (approx. 1 tbsp) |
1 | chicken breast fillet, cut into thin strips |
100g (3½oz) | broccoli |
600ml (1 pint) | chicken stock |
300ml (10fl oz) | coconut milk |
Salt and freshly ground black pepper | |
150g (5oz) | cooked rice (40g/1½oz uncooked weight) |
Method
Heat the oil in a pan and sauté the onion, garlic and chilli for 2 minutes. Add the strips of chicken and sauté for 2 more minutes.
Cut the broccoli into small florets. Add the broccoli and chicken stock, bring to the boil and simmer for 4 minutes. Stir in the coconut milk and simmer for 2 minutes. Season to taste and stir in the cooked rice.
