Thai-style food tends to be very popular with children. This easy-to- prepare soup is ready in about 10 minutes and is almost a meal in itself. Suitable for freezing.

Ingredients

1 tbsp light olive oil
150g (5oz) chopped onion
1 garlic clove, crushed
½ red chilli, finely chopped (approx. 1 tbsp)
1 chicken breast fillet, cut into thin strips
100g (3½oz) broccoli
600ml (1 pint) chicken stock
300ml (10fl oz) coconut milk
Salt and freshly ground black pepper
150g (5oz) cooked rice (40g/1½oz uncooked weight)

Method

Heat the oil in a pan and sauté the onion, garlic and chilli for 2 minutes. Add the strips of chicken and sauté for 2 more minutes.

Cut the broccoli into small florets. Add the broccoli and chicken stock, bring to the boil and simmer for 4 minutes. Stir in the coconut milk and simmer for 2 minutes. Season to taste and stir in the cooked rice.
