Introduction

This is a dish I first had on holiday in Mallorca after wandering into a bar for a glass of very cold white wine and asking if they did food. ‘We don’t really,’ said the waitress, ‘but I can make you something.’ What appeared was this: a ridiculously good dish of tagliatelle with garlic mushrooms, cherry tomatoes, cream and wilted spinach. Finished with a squeeze of lemon, it’s been a go-to dinner at home ever since, and it’s certain to become part of your repertoire too.
