Rainbow Iced Buns

My – and perhaps your – first bun love was pink or white iced buns from the supermarket. Looked like a bun, magically tasted like air and sugar, and the all-important choice – white or pink? My younger sister was convinced the pink ones were strawberry flavoured, but she’s come round to realising they were just sugar-flavoured – as are these beauties below. Please don’t worry if your buns aren’t as regular-shaped as the supermarket kind – they will taste just as good.
Ingredients
Essential kit
You will need: a lined baking tray and a wire rack.
Method
Follow the method on page 180 until your dough has proved. Knock back the proved dough, then divide it into 8 equal pieces – you can weigh these out if you want to be superprecise, but I usually do them by eye.
Roll each piece into an even sausage around 10cm long, and place them in rows on a lined baking tray about 2cm apart – you want them to lightly touch as they rise.
Leave the buns to prove for 20–30 minutes, until one and a half times their original size, then preheat the oven to 180°C fan/200°C/gas 6.
Transfer the buns to the oven and bake on a low shelf for 15 minutes, until well risen and golden brown on top. Place on a wire rack to cool, and gently tear or cut the buns apart.
Mix the icing sugar with the water a little at a time to form a thick icing, and divide between two bowls. Add a few drops or dabs of pink food colouring to one bowl and mix to your preferred shade.
Use a tablespoon to carefully ice the cooled buns, and serve when the icing has set.
