Pistachio and Date Brownies
As you may have noticed in this book, I love using date syrup as a substitute for brown sugar – it’s wonderful in its own right when you want a particularly date-like flavour, but has the added bonus of being diabetic-friendly. These sticky pistachio and date brownies are a moreish treat either way.
|diabetic-friendly dark chocolate (70% cocoa solids), broken
|medium free-range eggs
|sea salt flakes
|soft pitted dates, roughly chopped
|pistachios, roughly chopped
