Pineapple and Coconut Cupcakes
Introduction
A variation on two of my favourite desserts, pineapple upside-down cake and coconut macaroons. These lovely tropical cupcakes are dusted with just the barest hint of cinnamon – these are probably the most addictive cupcakes.

| unsweetened desiccated coconut | |
| gluten-free plain flour (or ordinary plain flour, if not making gluten-free) | |

| pineapple chunks, drained | |
