Peppermint Hot Chocolate

This is exactly what I imagine Santa’s elves drinking in the workshop. Cute, cosy and incredibly festive. This recipe is so easy to scale up for a Christmas crowd.

Method
To make the hot chocolate, put the milk and cocoa powder in a small saucepan and whisk until combined. Heat gently until hot but not boiling.
Remove the pan from the heat and stir in the grated chocolate. It should melt in the residual heat, but if not, return the saucepan to the stove over a low heat and gently melt the chocolate.
Next, add the peppermint extract to taste. Start with a few drops and build up, as strengths can vary from brand to brand and you may not need a whole teaspoon. Stir to combine.
Pour your hot chocolate into a mug. To serve, top with whipped cream and garnish with a candy cane.
