potatoes, fairly thinly sliced (your choice to peel or not)
large onions, fairly thinly sliced
ginger, finely grated
red chillies, thinly sliced
fresh coriander, leaves and stems chopped
medium free-range eggs, lightly beaten
Greek yogurt, sliced chillies and fresh coriander, to serve

neutral or olive oil
cumin seeds
ground coriander
ground turmeric
sea salt flakes
freshly ground black pepper
