Mini’s Masala Frittata
A perfect brunch dish for friends, packed with lightly caramelised spiced onions, thinly sliced potatoes and fresh coriander – you could think of this as an Indian take on a Spanish omelette. Even if you’re just making brunch for two or three people at the weekend, it’s worth making up the full frittata, as leftovers are perfect for working lunches over the next few days.

|ginger, finely grated|
|red chillies, thinly sliced|
|fresh coriander, leaves and stems chopped|
|medium free-range eggs, lightly beaten|
|Greek yogurt, sliced chillies and fresh coriander, to serve|
