Introduction

A perfect brunch dish for friends, packed with lightly caramelised spiced onions, thinly sliced potatoes and fresh coriander – you could think of this as an Indian take on a Spanish omelette. potatoes, fairly thinly sliced (your choice to peel or not)
large onions, fairly thinly sliced
ginger, finely grated
red chillies, thinly sliced
fresh coriander, leaves and stems chopped
medium free-range eggs, lightly beaten
Greek yogurt, sliced chillies and fresh coriander, to serve

neutral or olive oil
cumin seeds
ground coriander
ground turmeric
sea salt flakes
freshly ground black pepper
