Marzipan, Lemon and Cardamom Loaf
Introduction
Many of my favourite things in one loaf. For some reason I’ve never got on with lemon drizzle, so this cake is spiked with golden pieces of marzipan instead. Extremely moreish – especially baked in mini-loaf tins.
Ingredients
| softened unsalted butter | |
| caster sugar (golden if preferred) | |
| medium free-range eggs | |
| lemon, zest and juice | |
| self-raising flour | |
| baking powder | |
| cardamom pods, seeds ground, outer pods discarded | |
| marzipan, chopped into 1cm chunks |
