Ingredients

coconut milk
free-range boneless chicken thighs, diced
lemongrass, bashed
fresh mint, leaves chopped
fresh coriander, chopped
boiling fish stock
light brown sugar
sea salt flakes
fresh rice vermicelli noodles (from the chilled cabinet)
beansprouts
limes, juice only
For the spice mix:
banana shallots, peeled
ginger, peeled
garlic, peeled
fresh red chillies
shrimp paste
ground turmeric
ground coriander
To serve:
lime wedges and sliced chilli
