Mad Mango Salsa

Introduction
I’ve always been a huge fish taco fan and they go rad with this recipe. Check ‘em out here. I used to interview a lot of big metal and rock bands from the States and I always asked what they missed about America. The answer would always end up at fish tacos, and that’s the inspiration behind this salsa – it’s easy, refreshing and perfect with a taco. The fruit and fish are like brothers. If a fish taco was a pro-snowboarder, this mango salsa would be his best shred buddy.
Ingredients
1 | ripe mango |
½ | a medium red onion, peeled |
½ | a cucumber |
1 bunch | of fresh coriander, leaves picked |
juice from 1 lime | |
sea salt |
Method
Cut the mango halves off the stone and slice each half in a criss-cross shape. Cut off and finely chop the flesh with the onion, cucumber and coriander leaves, then scrape into a bowl. Squeeze in the lime juice and mix well. Season to taste with salt, before serving.
