Mad Mango Salsa

A zesty mango salsa recipe from Jamie Oliver's book Jamie's Food Tube. The vibrant mango is shaken up with red onion, cucumber, coriander and fresh lime juice.

From the book

Introduction

I’ve always been a huge fish taco fan and they go rad with this recipe. Check ‘em out here. I used to interview a lot of big metal and rock bands from the States and I always asked what they missed about America. The answer would always end up at fish tacos, and that’s the inspiration behind this salsa – it’s easy, refreshing and perfect with a taco. The fruit and fish are like brothers. If a fish taco was a pro-snowboarder, this mango salsa would be his best shred buddy.
