Introduction
Pasta with cauliflower, pine nuts and raisins is a popular Sicilian dish; here, I suggest creamy lemon and ricotta-enriched polenta as the base instead of pasta. It’s luxurious enough to serve to friends, but easy enough for a quick dinner at home too. The addition of the ricotta gives the polenta a wonderful lightness.
