Avocado and Tomato Toastie

Introduction
One of our fallback brekkies, easy lunches and lazy dinners! If you are feeling creative, you can introduce any type of pesto, harissa, hummus, mustard…
Ingredients
2-3 | slices of bread |
oil of your choice | |
1 | ripe avocado |
1 | ripe tomato |
juice of 1/2 a lime | |
salt and freshly ground black pepper |
Method
Toast the bread and drizzle with oil. Split the avocado, remove the stone, and cut the flesh into little squares while it’s still in the skin. Squeeze it out of the skin, spreading evenly between the pieces of toast, and spread it out.
Add a slice or two of tomato, a squeeze of lime and a pinch of salt and pepper to each slice of toast. (if you are into garlic, do as Dave does – rub a bit of garlic on to the toast first, and scatted with a few pitted Kalamata olives to finish, though this is not for everyone!)
