Amaretto Roasted Plums, Nectarines and Peaches with Pistachio Granola
Introduction
A dash of amaretto gives the gently roasted peaches, plums and nectarines in this dish the most wonderful almond flavour, but you could easily substitute elderflower liqueur or whatever you have handy in the cupboard. Cooking the granola in a tin alongside keeps it nice and crisp. This is a perfect late summer or early autumn pudding along with a spoonful of mascarpone or vegan ice cream.

plums, halved (or a mixture of your favourite orchard fruit) | |
soft light brown sugar | |
amaretto liqueur | |
flaked almonds | |
oats | |
pistachios, lightly chopped | |
olive oil | |
vegan ice cream or mascarpone, to serve |
