Airmail
Add a tropical touch to your Champagne with the Airmail cocktail. The drink blends together dark rum, lime juice and honey with ice, which gets strained into a glass and topped up with your favourite fizz.

A honeyed affair, where the tropical rum and lime blend with the subtler acid of the champagne.
Ingredients
25ml
dark rum
15ml
lime juice
10ml
honey loosened with 5ml hot water
Champagne
Method
Shake the first three ingredients over ice and double-strain into a cold flute. Top with champagne.
