Air Fryer Pastry Wraps with Asparagus, Parma Ham & Green Pesto

Crisp golden pastry, moreish salty ham, fresh asparagus and that perennial favourite pesto make these lovely open tarts a firm dinner winner. Serve them with a fresh green salad.

Ingredients

1 sheet pre-rolled puff pastry
plain flour, for dusting
2 tbsp green pesto
2 tbsp grated Parmesan cheese
a bunch of asparagus
4 slices Parma ham
1 egg, beaten

Essential kit

You will need: an air fryer.

Method

Carefully unroll your pastry on a flour-dusted service and cut into four equal squares.

Spread a quarter of the pesto onto each square and add a sprinkle of Parmesan cheese. Wrap a few spears of asparagus in a slice of Parma ham, then place them diagonally across a pastry square, so that the tips of the spears are at a corner of the square. Fold a free corner in and over the spear, then fold the opposite corner loosely over that so that you have an open parcel. Repeat to form four parcels, then brush all the exposed pastry with the egg wash.

Transfer the parcels to the air fryer, placing them on a piece of baking paper. Cook at 180°C for 10 minutes, or until the pastry is puffed and golden.
