Ingredients

4 chicken breasts
3 tbsp smooth peanut butter
2 tbsp coconut milk
3 tbsp dark soy sauce
1 tbsp medium curry powder
1 tbsp brown sugar
1 tsp garlic paste
1 tsp ginger paste
½ tsp chilli flakes

Essential kit

You will need: an air fryer.

Method

Slice the chicken breasts into thin strips.

In a large bowl, combine 1 tablespoon of the peanut butter, 1 tablespoon of the coconut milk, 1 tablespoon of the soy sauce, 1 teaspoon each of the curry powder and brown sugar, and the garlic paste, ginger paste and chilli flakes.
Stir well to make the marinade.

Add the chicken to the bowl with the marinade and stir well to make sure every piece is well coated. Leave the chicken to marinate in the fridge for at least 30 minutes.

Meanwhile, soak some wooden skewers in cold water.

Take the chicken out of the fridge 15 minutes before cooking to allow the meat to come to room temperature.

Thread the chicken onto the soaked wooden skewers.

When ready to cook, preheat the air fryer to 180°C.

Place the chicken skewers in the air fryer and cook at 180°C for 7 minutes. Turn the skewers over and cook for a further 5 minutes, or until the chicken is cooked through.
