Who’s the author? Theo Randall is one of the UK’s best-known Italian chefs, celebrated for his ingredient-led cooking and deep understanding of regional Italian food. He began his career at the iconic River Café in 1989 and later became Head Chef, spending 15 years helping to shape its hugely influential approach to Italian cooking.

After time working at Alice Waters’ legendary Chez Panisse in California, Theo opened his own restaurant, Theo Randall at the InterContinental in London, which has since expanded internationally. Alongside regular appearances on programmes including Saturday Kitchen, MasterChef and Sunday Brunch, he has written several acclaimed cookbooks including Pasta, My Simple Italian, The Italian Pantry and Verdura. In 2024, he was awarded the Order of the Star of Italy for his contribution to Italian culture and cuisine.
