You’ll learn how to prepare the essential building blocks of Japanese cuisine, including deeply flavoured broths, tare (seasoning sauces) and perfectly rolled maki, before putting your skills to use with dishes such as sashimi, katsu and teriyaki. There are also recipes for donburi rice bowls, crisp tempura and gyoza, giving you everything you need to put together your own Japanese-inspired feast.

Whether you’re looking to perfect a bowl of ramen, try your hand at homemade sushi or expand your repertoire beyond your usual takeaway favourites, Teddy’s step-by-step approach will help you build the skills and confidence to recreate restaurant-quality dishes in your own kitchen.

Who’s the author? Teddy Lee is the chef and founder of Maki & Ramen, the popular Japanese restaurant chain he established in Edinburgh in 2015. Having grown up working in his family’s restaurant kitchens, Teddy developed an early passion for cooking and hospitality before travelling to Tokyo to train at a prestigious sushi academy. It was there that he deepened his appreciation for the precision, craftsmanship and traditions of Japanese cuisine.

Since opening his first restaurant, Teddy has grown Maki & Ramen into a thriving business with locations across Scotland and England, as well as the UAE. Known for its carefully prepared ramen, handmade noodles and Japanese favourites, the restaurant group has built a loyal following, with Teddy’s commitment to sharing Japanese food and culture at the heart of its success.
