Introduction from Katie Marshall

Christmas isn’t Christmas without a ridiculous number of sausage products, and the humble cocktail sausage is no exception. These have a sticky, sweet glaze and a flurry of ‘everything’ seasoning in homage to the iconic New York everything bagel. This recipe also works brilliantly with veggie cocktail sausages.

Ingredients

50g (5½oz) runny honey
3 tbsp Dijon mustard, plus extra to serve
4 tbsp ketchup
600g (1lb 5oz) cocktail sausages(about 50)
For the ‘everything’ seasoning
2 tbsp white sesame seeds
2 tsp poppy seeds
2 tsp garlic powder
2 tsp dried onion
1 tsp flaky sea salt, plus extra to serve

Method

1

Preheat the oven to 200°C/180°C fan/400°F/Gas 6.

2

Combine the honey, mustard and ketchup in a small bowl. Put the sausages on a lipped baking tray, pour the honey mixture over them, and toss to coat. Cook for 15 minutes and, while the sausages are in the oven, mix the seasoning ingredients together.

3

Turn the sausages using tongs or a spatula, then season with the everything seasoning and cook for 10–15 minutes more, until the sausages are browned, lightly sticky and fragrant. Finish with an extra sprinkle of salt, then serve with extra mustard for dipping.
